It's just better.

We don't cut corners with our mixes. This cocoa has two to three times the cocoa butter of ordinary cocoa ( 22-24% rather than 8-10% found in grocery stores).

Our mixes are way better with this cocoa. Your baking will be much better with this cocoa, too.

Read the reviews. Every one is a five-star.

  • Much, much better than the cocoa in the brown can
  • Makes everything taste much better
  • Everything from pies to hot chocolate just got better
  • "Much better than grocery store cocoa."
  • "By far the best cocoa I've ever come across."
  • "Amazing!"
  • Gourmet dark cocoa from Germany
  • A 22 to 24% cocoa butter content compared to 8 to 10% for the national brand, making this three times as good.
  • ProA full pound in a resealable Mylar bag

Questions About This Cocoa

  • What makes it so good? Well, it's the cocoa butter, but it's also the processing. In Europe, it's generations of working with cocoa beans.  It's artisan work handed down.  But no matter how good you are, you must have good, rich beans.
  • Does it taste different? It tastes different. It even smells different. It has a deep, rich flavor. It's a richer flavor, but it's still smooth.
  • Do I need to make any changes in my recipe? No. All cocoa is bitter without sugar. If you liked the recipe before, it will be better with better cocoa.T
  • How should I store my cocoa? Seal the bag and store it in a dark, cool cupboard. The ideal temperature is 60 to 70 degrees, not above the store.
  • How long will it last? Three years in a sealed bag in a cooler cupboard.
  • Will it last longer in the refrigerator or freezer?  No, in fact it may affect the taste.  Just keep it dry and out of the sunlight.

How to Make a Much Better Hot Fudge Sauce

ultimate brownies

It’s easy to make this hot fudge sauce.  We made this both with 2/3 cup and 3/4 cup cocoa.  Both work.  Of course, you get a little deeper flavor with 3/4 cup cocoa. As with other hot fudge sauces, this thickens as it cools.  You can reheat it in the microwave.  You can also thin your sauce with additional cream.

Ingredients

  • 2/3 cup Ramstadt Breda Rich Dark Cocoa or equal
  • 1 cup granulated sugar
  • 1/2 cup butter
  • 1 cup heavy cream
  • 1 teaspoon vanilla

Directions

  1. Mix the cocoa and sugar together in a small bowl. Melt the butter in the microwave.
  2. Add the cocoa and sugar mixture to a small saucepan. Add the melted butter and cream. Heat, stirring constantly with a wire whisk, until the ganache starts to bubble. Remove from the heat.
  3. Let the ganache cool until it reaches the desired consistency. Thin with additional cream if necessary.

Baker's note:

Nothing beats cream, but if you don't have any on hand, use milk. The quality of the cocoa will carry the sauce.

Be sure to mix the cocoa and granulated sugar together before cooking to eliminate any lumps and make a smooth sauce.

Your friends and family will be astonished at the difference between this and store-bought cocoa. This is up to three times better! No wonder it is so rich, dark, and chocolatey.

They will be amazed at how much better your chocolate is.

How to Make Delicious Chocolate Whipped Cream

chocolate whipped cream recipe

Ingredients

  • 3 tablespoons meringue powder
  • 1/2 cup sugar
  • 1/2 teaspoon Madagascar vanilla
  • 2 cups heavy whipping cream
  • 3 tablespoons Ramstadt Breda Rich Dark Cocoa

In this recipe, you use a little meringue powder, enough to make your whipped cream firmer.

Directions

  • Whisk the sugar, dark cocoa, and meringue powder together. Set it aside. Whip the cream until soft peaks begin to form. Add the dry mixture a little at a time. Add the vanilla. Beat until stiff peaks form.

Baker's notes

In this recipe, you use a little meringue powder, enough to make your whipped cream firmer.  Without the meringue powder, whipped cream melts.

There’s great chocolate flavor from this cocoa. A couple of years ago my goal was to find a recipe and a cocoa for brownies where I liked the brownies with cocoa as much as brownies with baking chocolate. I found a simple one-pan recipe for the brownies and never miss the baking chocolate when I use the Ramstadt cocoa. Sometimes instead of using mini chocolate chips, I chop up a Ritter Sports Bar—dark chocolate with hazelnuts—to add to the brownies instead.
