These are wonderful dinner rolls--perfect for Sunday dinner and the standard of homemade heirloom rolls.

  • Directions and tips for perfect rolls are included.  You can make this bread in your bread machine, by hand, or with a stand-type mixer.  Using your bread machine, use the dough cycle, then form the rolls, let them rise, and bake them in your oven.

If you make this bread in your bread machine, water temperature is critical.  Please use a thermometer to measure water at exactly 80 degrees.  A ten-degree difference in water temperature can double the growth rate of the yeast.  These bread mixes are satisfaction guaranteed when you use a thermometer.  Learn more about insta-read thermometers.

This makes fabulous hamburger buns. Homemade burgers buns are much better than store buns, just as homemade bread is better. These are also great sandwich buns.

How to Make Dinner Rolls

  1. Mix the bread according to the package directions. If you are using your bread machine, set the machine on the “dough” setting so that the machine will mix the dough and let it rise. With most machines, the dough cycle is setting "8" and will take an hour to an hour and a half. If you are making bread by hand or in your stand-type mixer, just follow the directions. 

  2. Divide the dough into twelve equal pieces. For uniform buns, use scales to weigh each dough piece.

  3. Form a round or oval roll with each piece. Pull the dough taut over the center as if you have a marble in the center of the dough. Pinch the seam together on the bottom of the roll.

  4. Place the rolls seam-side down on a greased baking sheet or a baking sheet lined with parchment paper with room to expand.

  5. Cover the rolls with plastic wrap or place the pan with the rolls in a proofing bag and let rise until doubled—45 minutes to an hour or so, depending on the mix and the room temperature. 

  6. If you put seeds or salt crystals on your rolls, whisk with a fork one egg with one tablespoon of water. Just before baking, brush the tops and sides with the wash and then sprinkle with seeds. The wash will keep the seeds in place. 

  7. Bake the rolls at 350 degrees for about twenty minutes or until the tops turn light brown. The inside of the rolls will measure 190 degrees with your kitchen, probe-type thermometer. Immediately remove them to a wire rack to cool. Serve them fresh. 

Note: To put a dusting of flour on top of the rolls, instead of a wash and sesame seeds, simply shake a little flour through a screen over the tops of the rolls. You can use a small strainer or a sifter for the screen.

  1. Mix the bread according to the package directions or recipe. If you are using your bread machine, set the machine on the “dough” setting so that the machine will mix the dough and let it rise. With most machines, the dough cycle is setting "8" and will take an hour to an hour and a half. If you are making bread by hand or in your stand-type mixer, just follow the directions. 
  2. Divide the dough into eight equal pieces. For uniform buns, use scales to weigh each dough piece.
  3. Form a round or oval roll with each piece. Place them on a greased baking sheet or a baking sheet lined with parchment paper with room to expand. With the flat of your hand, flatten each roll. The elasticity in the dough will tend to make the rolls spring back. Let the dough relax for a few minutes, and then press a second time.
  4. Cover the rolls with plastic wrap or place the pan with the rolls in a proofing bag and let rise until doubled—45 minutes to an hour or so, depending on the mix and the room temperature. 
  5. If you put seeds or salt crystals on your rolls, whisk with a fork one egg with one tablespoon of water. Just before baking, brush the tops and sides with the wash and then sprinkle with seeds. The wash will keep the seeds in place.

Dough conditioner added for better baking (wheat flour, dextrose, soy flour, calcium salts, dicetyl tartaric acid esters of mono- and diglycerides, ethoxylated mono- and diglycerides, soy lecithin, ascorbic acid, L-cysteine monohydrochloride, fungal enzymes, azodicarbonamide, and calcium iodate). These products contain wheat, soy, and dairy products and may contain traces of eggs, peanuts, or tree nuts.

Beat rolls ever!

I'm not a good baker with yeast but I love my bread machine and The Prepared Pantry is the ONLY place I can find great products to use with my bread machine these days! The Sunday Dinner Rolls are really easy, versatile and fun to make. Our favorite thing is what we call pepperoni rolls .... rolls stuffed with pepperoni and baked! So good! Everyone should try it!
