This is not a sweet bread--like banana bread. It's a yeast bread. I love it just the way it is.

You can do everything with it. It makes fabulous French toast. You can make dinner rolls. If you really want to delight your family, make cinnamon rolls. Or make a simple loaf and a cream cheese spread flavored with your family's favorite jam.

That's hero stuff.


How to Make Killer Pumpkin Sandwiches

This is such an unusual bread that it warrants some killer sandwiches. So we went to work.

Grilled Black Beans and Bacon Sandwich.

Ah, we snuck a layer of mozzarella in there. The trio of black beans, bacon, and mozzarella in a crispy sandwich is a killer.

  1. Drain a can of black beans and cook the bacon to a crisp.
  2. Make a sandwich with 1/4-inch slices of mozzarella. Slather one side generously with butter and slap your sandwich butter down in the skillet. Slather the other side with butter. The butter is going to make the sandwich crispy.
  3. Put a glass lid over the sandwich so you can trap the heat and watch the sandwich. When it's done on one side, flip it over and replace the lid.
  4. When the cheese starts to drool, put the drained beans in the microwave and heat them for 30 seconds or until they steam.
  5. Pull the sandwich from the pan, slip it onto a plate, and pry the lid open. Spoon the hot beans over the melted cheese--they should start to sink into the cheese. Then load on the bacon and replace the lid.
  6. Place the plate in the microwave and nuke your sandwich for 15 seconds to make sure your cheese is ooey-gooey and going everywhere.

Serve it hot to your best friend. Now he's always your sidekick.

Maple Cream Cheese, Ham, and Pear Sandwich.

We googled, "What goes well with pumpkin?" That's where we came up with black beans and pumpkin. But that's two warm, earthy flavors that complement each other.

But pear and pumpkin, they're contrasting--the earthy and the sweet, the warm and the cool. Outstanding. The beans and the pumpkin were like fall and the pear and the pumpkin were like spring.

Maple cream cheese makes anything good. But the pear slices, fresh and crisp, make it irresistible.

  1. Nuke an 8-ounce block of cream cheese to soften it up. Plop it in your stand-type mixer with three tablespoons of maple syrup. Whip it until it's smooth. Since it's warm, it will spread like mayonnaise.
  2. Take two thick slices of pumpkin bread and spread a 1/4-inch layer of cream cheese on one.
  3. Slap some ham on the cream cheese.
  4. Quarter and core a barely ripe pear (you want it a little crispy). Slice it, with the peel on, into 1/4-inch slices. Arrange some over the ham.
  5. Add lettuce and a topper and you have a sandwich.

How to Make Cream Cheese Spreads

Flavored cream cheese spreads are great on bagels as well as flavored breads like walnut or banana bread. The trick is to make it smooth, spreadable, and flavorful. Softening your cream cheese in the microwave helps. Granulated sugar tends to cut through the cream cheese making it softer and easier to spread.

  • 8-ounce block of cream cheese
  • 2-tablespoons granulated sugar
  • Jam or pastry filling to taste.
  1. Soften the cream cheese in the microwave for about 12 seconds.
  2. Whip the sugar and the cream cheese together in an electric mixer until almost smooth. Do not overwhip.
  3. Add the jam or pastry filling and continue whipping until combined.

Refrigerate any leftovers.

This is incredibly good pumpkin bread! Imagine a warm, inviting bread with an earthy tone of real pumpkin, cinnamon, other spices, and a cup of fresh walnuts in every loaf. It's not too spicy. It's just right.

Use this bread for breakfast toast, for great French toast, or for snacks. We like to eat this bread with pear freezer jam, cinnamon cream syrup, or apple syrup. It is delicious. Red currant jelly, with or without cream cheese, is also a classic companion to pumpkin bread. This bread makes interesting sandwiches. It makes great peanut butter and jam sandwiches but try it with turkey breast, provolone, and raspberry jam. This is a fun bread to get creative with.

This is amazing bread. It's moist, fine, and flavorful. It's a yeast bread but with all the pumpkin, it has the moistness of a quick bread. It has a mild blend of spices, enough for a flavorful background without being overwhelming.

Give it a try. There's so much you can do with this bread.

Baker's Notes

This bread works fine in a bread machine but we've usually made it in the oven. If you let it rise, it will make an enormous loaf.

The round loaves were made in 9-inch cake pans. The sweet rolls were made with apple filling and a cream cheese frosting. They are incredibly good!
