How to Make Summer Peach Ice Cream
In the little farm town where I was raised, peach harvest was a big deal. Mother recruited the kids and we bottled peaches but what we really liked were frozen peaches. We ate them like ice cream all winter. Dad ate most of the bottled peaches.
This is a no-churn ice cream recipe but you can use your ice cream machine.
For the syrup
- 1/2 cup brown sugar
- 3 large egg yolks
- 1 pinch of salt
- 1/2 cup milk
- optional: 1 1/2 tablespoons orange zest (zest from about two oranges)
Directions for the syrup
- Mix the brown sugar, egg yolks, salt, and milk together in a saucepan.
- Cook, stirring often until the sauce just begins to bubble. Do not boil. If you have a candy or insta-read thermometer, the target temperature is 170°F. Remove from the heat and add the orange zest. Put it in the refrigerator to cool completely.
For the ice cream mixture
- 1 1/2 cups heavy whipping cream
- 1/4 cup sweetened condensed milk
- 2 teaspoons peach flavor
For the mix-in
- 1 1/2 cups frozen peaches, diced into 1/4-inch chunks
Directions for the ice cream mixture and mix-in
- Beat the whipping cream with an electric mixer until soft peaks form. Add the peach flavor.
- Fold about one cup of whipped cream into the sweetened condensed milk.
- Fold the mixture of whipped cream and sweetened condensed milk, along with the syrup, into the rest of the whipped cream until blended.
- Scrape this mixture into a chilled pan, cover, and freeze for about two hours--until it is of the consistency of soft-serve ice cream.
- Fold in the mix-in, the diced peaches, and continue to freeze for three more hours or until it is frozen hard and scoopable.
