When you want a light, moist wheat bread, this is your bread.
Because it's as soft and moist as homemade white bread.
Even your kids will like this bread. It's loaded with buttermilk and made with a mixture of fine-ground, whole wheat flour, and our best bread flour from Montana. It's got substance but it's light, not heavy. You'll enjoy this bread. So will your family and friends.
Not only is this bread light and fluffy, but it also has a better flavor. It's a homemade bread but the secret is in the dairy. Each loaf has 1/4 cup pure buttermilk powder. We use far more milk, sour cream, or buttermilk in our breads. In this bread, you'll discover the rich, tangy taste of buttermilk. It's the best light wheat bread you've ever tasted.

Hints, Tidbits, and Suggestions
What is buttermilk anyway? It is the skim milk that was left after our grandparents churned butter from cream. What we buy today from the grocer is a cultured low-fat milk product. Most food producers use a dried version of the same thing but there are hundreds of variations available. We investigated many and tried several before settling on the cultured skim milk product that we wanted to use in our mixes. Our criteria? We wanted excellent keeping qualities and that characteristic buttermilk tang.

Directions for use in the oven
- Place the mix in your stand-type mixer along with the yeast and melted butter or oil (if called for on package directions). Add water. Use 110°F water instead of 80°F.
- With the dough hook, mix slowly until the dough ball forms. Turn the speed to medium high and mix for five to ten minutes until the gluten forms and the dough becomes stretchy and elastic.
- Place the dough in a large greased bowl, cover, and let rise until doubled, about one hour, depending on room temperature.
- Preheat your oven to 350°F. Turn the dough onto a lightly greased or floured work area and form your loaf. Place your dough in a 9 x 5-inch pan or other pan and let rise until the size has doubled and bubbles are about to surface.
- When the bread has raised, place the loaf on the center rack of the oven. Bake for 35 minutes or until the bread is done. The internal temperature should reach 190°F. Remove the loaf from the pan and let it cool slightly before slicing.
NOTE: If you make this bread in your bread machine, water temperature is critical. Please use a thermometer to measure water at 80 degrees and we'll guarantee the bread. If you are baking the bread in the oven, use water that is 110°F.
