When I was a kid, gingersnaps were a big deal. They had snap to them and ginger to them and a cold glass of milk and a pile of gingersnaps after school would right the world.

Gingersnaps were my dad's favorite cookie. If we were going fishing, he would share his gingersnaps, and nothing would be better than fishing with my dad and gingersnaps.

 Mother would go to town and buy these big brown bags of gingersnaps. They weren't homemade, but with four brothers, we could make them disappear pretty quickly. 

Homemade were better. We loved them. They were bright and gingery and snapped when you bit them. After you ate one, your mouth felt cool from the ginger.

I miss our Schwinn bikes, the quiet country lanes, and meadowlarks singing from the fence posts. And gingersnaps.

These are the homemade gingersnaps from yesteryear. Expect to make about 40 from this mix. It's a big batch but they store well and freeze well.  You can even make dough balls, freeze them, and bake them, say ten at a time. Then, you can bake fresh gingersnaps any time you crave them.

Get to know your old-fashioned gingersnaps!

  • For a gingersnap mix, that seems a little pricey? Think of it as a double mix. It's twice the size of store mixes, and larger than our other mixes.  It makes 40 homemade cookies.
  • Is 40 cookies real? Oh yeah. One lady made 52.
  • Okay, are these cookies really that good? Yes! They aren't just five-star; they are an enthusiastic five-stars. The one four-star hasn't made them yet.
  • Are they simple to make?  Yes, just like snickerdoodles.
  • How do they compare with snickerdoodles? If you like snickerdoodles, you'll love these. They're snickerdoodles with flavor . . . and with snap. 
  • What about the baking time? Oh, I wish all ovens baked the same! Mostly, you want soft, tender cookies. If you want these to have some snap, you'll need to bake them another minute or two. They're good either way.
  • That many cookies, will they stay snappy? Humid climates are hard on snappy. Freeze the extras or at least store them in a container with a tight lid.  Or freeze the dough.
  • I've never frozen cookie dough before. Tell me about that.  Make the dough balls and freeze them. It's a slick trick. You can bake a smaller batch every Sunday afternoon.  Just get them out of the freezer, let them thaw, and bake them.
  • Tell me how to freeze them. Make up all the dough balls and then divide them into equal groups, say 10 cookies for each batch. If you have the same number of cookies in each bag and the dough is thawed, each batch will bake the same.
  • How long can I store the dough in the freezer? I don't know. I'm usually anxious for another batch of fresh cookies. I suppose a couple of months.

Gingersnaps just like Mom’s!!

Easy to make, delicious gingerbread snaps/cookies. Reminded me of the cookies that I had at home during my childhood! If you bake them for the maximum recommended time- they are nice and “snappy” after cooling down ….. if you leave them in the oven for the minimal recommended time - they are a bit chewier. Either way, they are absolutely delicious!!! Can’t go wrong either way!!  --David Semenoff

This Gingersnap mix is better than homemade. It has the perfect amount of ginger and is quick & easy to make. While the package states it makes approximately 40 cookies, I actually got 52 . I would give it 6 stars if possible.  --ROSE MARIE ENOS
