Roasted Peppers and Garlic with Mozzarella Focaccia Recipe

This is my new favorite focaccia. It's colorful and attractive and tastes even better. The mozzarella melts into pure white blotches against a colorful background. The Italian herbs and garlic are reminiscent of an authentic country pizza. Add a salad and you have a meal.

 

Ingredients


    Directions

    1. Cut the bell peppers into thin slices. Sauté them in olive oil until they are almost tender. Sprinkle them with salt. Set aside.
    2. Inside the mix is a package of herbs and garlic. Pour the contents into a cup and add 1/3 cup of good olive oil and stir. Set aside.
    3. Mix the dough according to the package instructions.
    4. Press the dough into a 15-inch round pan or an 11x17-inch baking sheet. Cover and let rise until puffy.
    5. When puffy, dimple the dough with your fingertips and then spread marinara over the dough.
    6. Scatter the pepper pieces across the dough.
    7. Drizzle the olive oil across the peppers.
    8. Bake for 15 minutes or until the exposed crust is golden brown. Slide the bread onto a rack and let cool.
