Huevos Rancheros on a Corncake

A crispy corn cake base topped with fresh salsa, avocado, and sunny-side-up eggs.

Corn cakes make great waffles. As shown, we usually stack goodies on pancakes made with Texas corn cakes, but waffles are just as good and make a fine foundation for a meal.

This egg is sitting on a bed of fresh, homemade salsa made with diced tomatoes, avocado, and cilantro. For flavor, add lime juice and a little South of the Border seasoning. Sprinkle some shredded cheese over the salsa before adding the fried egg. If you are using larger waffles, add two eggs.

• What's a corn cake? There are lots of corn cakes. They're a cross between pancakes and cornbread. They're slightly sweet, about like pancakes.
• Are they more corn cake or pancake? For me, they're balanced right in the middle.
• So, this is not a casserole dish? I have never had one that way, but I am aware that there are some corn cake casseroles out there.
• Are they as good as pancakes? Better. I like cornbread, and these corn cakes are better than pancakes.
