Dutch Apple Pecan Pancakes
2 cups pancake mix
1 cup water
1/2 tablespoon oil
1/2 cup peeled, diced apples
2 to 3 tablespoons chopped pecans
3/4 teaspoon cinnamon
Prepare batter as directed. Add the apples, pecans, and cinnamon. Cook for two minutes on each side.
Classic Multigrain Blueberry Pancakes
Prepare batter as directed. For every one cup of mix, add 1/3 cup frozen or fresh blueberries. (Do not thaw frozen blueberries else the batter will turn blue when stirred.) Cook for two minutes on each side.
