Sicilian Roasted Garlic Focaccia

If you are using our Italian Garlic and Herb Focaccia Mix, it already has garlic in it, but it's not a heavy application. With this method, you can add as much garlic as you like. It's easy to do, and you can use this method to add raw minced garlic to any focaccia.

Raw garlic burns easily in the high heat of the oven. This method protects the garlic pieces from the heat of the oven.

The mix comes with an Italian seasoning packet. Follow the mix directions, mixing the seasonings with olive oil. Following the mix directions: After rising, dimple the dough, and drizzle the seasoned oil over the dough.  The oil will collect in the dimples. Chop the garlic into tiny pieces and press them down into the dimples. The pieces should be entirely covered with oil or herbs to protect them from the heat of the oven.  

Bake the focaccia as directed on the package.

If you look closely at the focaccia in the image, you will see pieces of garlic pressed into the dough.  This one also had a few sprigs of rosemary added. That's optional.
