Farmhouse Grilled Sandwiches

Great Tuna Melt Sandwiches

Ingredients

1 tin of tuna, well drained and crumbled
3 tablespoons mayonnaise
2 tablespoons sweet relish
2 green onions, chopped (optional)
1 stalk celery, finely chopped (optional)
fresh ground black pepper to taste
salt to taste
1 slice cheese, mozzarella or other, for each sandwich
bread
butter

Directions

  1. Mix the tuna, mayonnaise, lemon juice, chopped onion, and celery together with a fork.  Salt and pepper to taste.  Spread on bread slices.  Add a slice of cheese. Top with additional slices of bread.
  2. Spread butter on both sides of the sandwich and grill in a moderately hot skillet, turning once, until the bread is fried to a golden brown and the cheese is melted. I usually put a lid over the top of the frying pan or over the sandwich on the griddle to get the cheese melting sooner.

 

The Grilled Breakfast Berry Sandwich

 

This is a fresh raspberry breakfast sandwich made two ways, both with softened cream cheese and fresh raspberries. The first is grilled like a grilled cheese sandwich. The second is French toast style.  

  1. For both, whip the cream cheese with a teaspoon or so of honey until soft and spreadable. Set it aside.
  2. Lightly mash fresh raspberries in a shallow bowl. They should be chunky.
  3. Cut two slices of homemade bread. Spread the softened cream cheese on both. Spread your chunky raspberries on one slice. Top it with chunky raspberries. Add the second slice on top of the other with the filling in the middle.
  4. Butter both sides, and place the sandwich in a hot skillet. Cook it as you would a grilled cheese sandwich--until  the cheese is melty and the bread is crusty.
For the French toast-style sandwich

Make an egg wash with one egg, a splash of milk, and a sprinkle of cinnamon. Cook it in a buttered pan until it's golden on both sides.
