Questions About This Cocoa

  • What makes the cocoa better? It's the cocoa butter plus generations of artisan processing in Europe. We've tested cocoa for 20 years and never found a good one with less than 16% cocoa butter. This one has 22 to 24%.
  • Does it taste different? It tastes different the moment you open the bag — even the smell is richer and deeper. The flavor is bold yet smooth, never bitter.
  • What do the stores have? Most grocery store brands have 8 to 10% cocoa butter — less than half of what a really good cocoa contains.
  • Why don't they use the good stuff? It's too expensive. Grocery stores compete on cost.
  • How can you compete? We don't have the huge overhead that grocery stores do. They need expensive locations where people live. We're out in the country where things cost less, so we can bring you better cocoa without charging more.

How to Make Cheesecake Brownies

These are great brownies. This mix makes wonderful cheesecake brownies — we'll show you how. You'll need two 8-ounce packages of cream cheese and four large eggs.

Make a simple cream cheese batter and swirl it into your brownie batter before baking. It's that simple. You should be doing this often.

This is an easy recipe because you start with a mix, and the cheesecake filling is simple. This is our most popular brownie recipe. Grab a mix and give it a try.

1 Uncle Bob's Brownie mix
2 8-ounce packages of cream cheese
1/2 cup granulated sugar
1 teaspoon vanilla extract
4 large egg yolks

Preheat the oven to 325 degrees. Lightly grease a 9 x 13-inch baking pan. Dust with flour or line with parchment paper.

  1. Mix the brownie batter according to mix instructions. Set aside.
  2. For the cream cheese filling, beat the cream cheese until fluffy. Add the sugar and vanilla and beat in. Add the egg yolks and beat until smooth. Set aside.
  3. Pour half of the chocolate batter into the prepared pan. Spoon half of the cream cheese filling onto the batter in pools. Pour the rest of the chocolate batter over the cream cheese pools. Spread the batter smoothly. Spoon the remaining cream cheese filling in pools over the top of the brownie batter.
  4. Hold a table knife or spatula vertically and cut through the batters just until the two batters are swirled together. Do not over-mix.
  5. Bake for 35 to 40 minutes or until the brownies test done by sticking a toothpick or knife into the center of the pan. The brownies will be done when moist crumbs cling to the toothpick or knife. Let the brownies cool completely before removing them from the pan.

These were made like those above except they were baked in a large springform pan instead of a rectangular pan. The red sauce is Strawberry Designer Dessert Sauce.
