
Dad's Cinnamon Bun Soft Pudding Cookies
These are vanilla pudding cookies loaded with cinnamon chips.
We made a batch of these for a video shoot today. They were perfect cookies, so the camera was easy. Once the camera work was done, they were easy to eat.
They are loaded with cinnamon chips, so they were very cinnamon-y. They really do taste like a cinnamon bun. A glass of milk does them well.
We, too, found that they bake very quickly--on a dark pan and a dozen to a sheet, about 8 1/2 minutes. On a light pan, they would probably take another minute. Looking at the top of the cookies, they didn't look quite done, but on the cooling rack, they were perfect.
These are addictive. The combination of cinnamon chips and vanilla custard pudding makes it very difficult to just eat one.
Each mix weighs 24 ounces and makes 36 cookies with a 1 3/8-inch scoop.
Questions about these cookies
- Did you really get 36 cookies? We only made 34. I tend to overfill the scoop.
- That's still a lot of cookies. We only baked a dozen, 12 perfect cookies. We made the 34 scooped dough balls and froze the rest. You can make just as many as you want and freeze the rest to bake another day.
- Doesn't that change the baking time? Not if you let them thaw completely; otherwise, add a minute or two to your baking time. If you think they're done, put one on the cooling rack and look at the bottom side. Ours were perfect, a deep golden color, not brown.
- What's the deal with the vanilla custard pudding? It makes for a rich, smooth cookie with a little less flour.
- So would you recommend these? Yes, they're very good cookies and lots of them.
- Are they a good buy? I think so--three dozen pudding cookies loaded with baking chips.

Everyone who had one loved them but there was something in them that gave me food poisoning. Probably the barley but not sure. Everyone else that ate them had no problem. Even sent a bunch home with other people. Tasted great the first time down.
