  • What does this taste like? It tastes completely different from any cake you've had before. The pears are sweet but never overpowering, while the candied ginger is the star--warm, slightly spicy, and absolutely addictive. Every bite has real pieces of pear and little bursts of ginger.
  • Tell me about the pears. We use real, premium pears from a trusted importer in Chicago. They are so good that we built this cake--and some cookies with them. You'll find generous pieces in every single bite. 
  • Will my kids like it? Adults love it. Kids are hit or miss. This cake is quite different from what most children are used to, so some love the unique flavor while others aren't sure. Adults, on the other hand, go crazy for it.
  • How did you come to make a gingered pear cake? We were inspired by the traditional holiday fruitcakes that pair fruit with candied ginger--but we wanted something much lighter. This cake has the same festive combination of fruit and ginger, just in a moist, elegant cake instead of a heavy fruitcake.
  • Is this a party cake then, not a family cake? It's a special occasion cake that still feels warm and welcoming.  It's perfect for church suppers, family reunions, or anytime you want to bring something that people will talk about.  
  • Could I make cupcakes here? Absolutely. This makes delightful cupcakes. I'm thinking cupcakes filled with whipped cream or frosted with a light cream cheese frosting.

  • How should I present it?   Impress them with the taste, not the artwork. This cake is impressive, whether you go elegant or casual. A simple 9x13-ich pan works perfectly, or make it into a layer cake. 
  • What about the frosting? A light cream cheese is perfect with this cake.  With the pears and ginger, it has a lot of flavor. Pick a lighter frosting that won't compete with the cake.

    Three layer cake made with a 9 x 13-inch pan

    This cake was baked in a 9 x13-inch baking pan. The edges are trimmed and then the cake is cut into two or three equal pieces with horizontal cuts. With two or three equal pieces, the cake can be stacked and frosted just like a traditional round layered cake.  Frosting is used between the layers.

    Suggestions for entertaining:

    If I had a party next week, there is no question--this is what I'd serve. If it were a formal party, I would make a layer cake with ginger buttercream frosting. If it were an informal affair, I would make it in a sheet cake and top it with light cream cheese frosting. If I were short on time, I would serve it with dollops of whipped cream. 

    Baker's notes:

    The pear and ginger pieces soften in the baking. You'll find the crumb to be soft and moist, a little lighter than most carrot cakes. The pears give so much natural sweetness that you can enjoy this cake without any frosting.
