Make chocolate whipped cream. Substitute medium cocoa for dark cocoa. If you want your pancakes to taste more like banana bread, use one ripe banana, mashed, and one teaspoon of banana flavor.
These pancakes are topped with "birthday cake vanilla"—French vanilla. This is very different from plain vanilla and works on desserts as well as pancakes.
