Mayan Chocolate Chip Pancakes! These are wonderful chocolate pancakes.
Both Carrie, our production manager, and Neil, our database manager, insisted that the chocolate pancakes served at the national pancake chain in Idaho Falls were very good. We were a bit skeptical. Chocolate pancakes seemed like an indulgence. Finally, we relented and tried them. They were surprisingly good.
We went to work in our test kitchen making batch after batch. Finally, we had just what we wanted--rich chocolatey pancakes with a touch of cinnamon and just-right sweetness.
Both Carrie and Neil proclaimed them better than at the national chain.
Mayan Chocolate Chip Pancakes are made with dark chocolate and just a hint of cinnamon. They are a bit richer and with more chocolate than at the pancake house. We served these with maple syrup, coconut cream syrup, and raspberry syrup. They are not overly sweet and the syrup makes them perfect.
