This mix is based on an old heritage cookie recipe. Our great grandparents made these cookies by soaking the raisins overnight in rum. We accomplish the same thing with a great flavor combination.
A note about oats and their nutritional value:
Oats are popular in moist, cool climates like Scotland, Ireland, and Northern Europe where they grow better than wheat. As a cereal grain, oats are rich and flavorful. To make rolled oats, cleaned oats are toasted and then hulled to become oat groats. The groats are then steamed and rolled to become old-fashioned rolled oats or cut into pieces before steaming and flattening to become quick-cooking rolled oats.
Oats are a healthy food. Rolled oats are higher in protein than is wheat. They are also higher in fat but the fat contains a natural anti-oxidant that retards spoilage and makes it a healthier choice. The oats in one of our cookies contain about 16 calories, only 1/4 gram fat, and nearly 1/2 gram of dietary fiber.
