You can take almost any French toast and convert it into pecan (or other nut such as peanut) crusted French toast. Simply crush the nuts and after dredging your sandwich in the egg wash, press both sides into the crushed nuts.

Pecan Crusted Strawberry Stuffed French Toast
This French toast was made with strawberry pastry filling (but you can use jam). The pecans were crushed with a rolling pin. You can also use a nut chopper. The caramel syrup is buttermilk syrup. We topped this French toast with caramel whipped cream and served it in the store. It was a big hit.
You can make caramel whipped cream like vanilla whipped cream: Substitute brown sugar for the white caramel flavor for the vanilla. We always add a tablespoon or two of meringue powder to make the whipped cream firmer and retard melting.
Pecan Crusted Cherry Cream Cheese French Toast
This is made exactly as the strawberry but with a cherry pastry filling and a layer of cream cheese filling.
We used a cream cheese pastry filling but you can make a cream cheese spread by whipping softened cream cheese with sugar. If you would like a softer spread, add a little heavy cream as you whip.
