This is a high quality, finely ground, malted whole wheat bread flour milled from selected hard, red spring wheat. It works in muffins, cookies, and pizza crusts as well as in bread. This is the best, whole wheat flour that we can find. It has a nice, smooth, nutty flavor--not bitter at all. This is the only whole wheat flour that we use. This is very, very fresh flour--milled within the last 60 days.
