You can simply serve fresh fruit atop your French toast. But you can also make a fresh fruit filling for your French toast.
Here you will find two recipes: One is a Banana Pie French Toast and the other is a Strawberry Lemon French Toast.
We have also made a Blueberry Cream Cheese French Toast. For that, we whipped cream cheese with sugar to get the desired sweetness and then stirred broken blueberries into the cream cheese just enough to get a swirled effect.
Banana Cream Pie French Toast
With Bavarian cream and sliced banana as a filling, this really is like a warm banana pie for breakfast. This is memorable.
Bavarian cream pastry filling
4 large eggs
1/4 cup milk
6 to 8 slices of bread
In a flat dish, mix the eggs and milk.
Spread Bavarian cream filling and slices of banana between two slices of bread as if making a sandwich.
Place the sandwich in the egg mixture, let it soak for a moment, and then repeat on the other side.
Cook on a hot grill as for French toast. The temperature should be slightly lower than normal to allow the heat to penetrate to the filling.
Serve with vanilla cream syrup and a dollop of whipped cream.
Strawberry Cream Cheese French Toast with Bright Lemon Syrup
We served this French toast on a Saturday morning in our store and it was a big hit.
So as not to wilt the strawberries over the heat, we made the French toast in slices and then assembled the stuffed French toast.
For uniform thin strawberry slices, use a strawberry slicer.
The lemon syrup tastes exactly like a lemon pie and is a perfect match to the fresh strawberries.
We used a cream cheese pastry filling but you can make a cream cheese spread by whipping softened cream cheese with sugar. If you would like a softer spread, add a little heavy cream as you whip.
This is another very memorable stuffed French toast.
Slice the strawberries. A strawberry slicer slices them thinly, the perfect size, and is quick and easy. Sprinkle a little sugar over the strawberries to sweeten them.
Make French toast. Keep warm in tortilla keeper or in a 200 degree oven.
Spread cream cheese pastry filling on half of the slices.
Spread sliced strawberries over the cream cheese. Top with the other slices of French toast.
Serve with warm lemon syrup.
