This is the very best gluten free flour blend we have found. It tastes like regular food!

Finally, a flour blend that you can substitute cup for cup for the wheat flour in your favorite recipes.

It acts like flour because it is flour--the perfect blend of white rice flour, tapioca flour, brown rice flour, and sorghum plus a blend of starches and xanthan gum.

Now you can bake like Grandpa used to bake.

Pancake or Waffle Recipe

4 large eggs

1/4 cup vegetable oil

2 1/2 cups milk

2 1/4 cups flour blend

4 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon sugar

Directions:

  1. Mix the first three ingredients, the liquid ingredients, together in a small bowl.
  2. Whisk the rest of the ingredients, the dry ingredients, together. 
  3. Combine the wet ingredients with dry ingredients in a larger bowl.  Stir until most of the lumps are gone.  The batter will thicken as you stir.  Add more liquid to get the desired consistency.
  4. Cook on a hot griddle as you would with other pancake batters.

Basic Muffin Recipe

Use this as a starting point for delicious muffins.  Serve them plain or add blueberries and two tablespoons lemon juice, craisins and two tablespoons orange juice, chopped maraschino cherries, raspberries, cinnamon chips, or other fruit, nuts, or chips.

2 1/2 cups flour blend

1/2 tablespoon baking powder

1/2 teaspoon baking soda

3/4 teaspoon salt

1/2 cup melted butter

1 cup sour cream

1 1/2 cups sugar

2 large eggs

1/2 teaspoon vanilla

Directions:

Preheat the oven to 350 degrees.  Grease a muffin pan or fill with paper liners.

  1. Whisk the first four ingredients, the dry ingredients, together in a medium bowl.
  2. Mix the rest of the ingredients, the wet ingredients including sugar, together. 
  3. Combine the wet ingredients with dry ingredients in a larger bowl.  Mix until the dry ingredients are moistened.
  4. Cook on a hot griddle as you would with other pancake batters.
  5. Fill each cavity about 2/3's full with batter.  
  6. Bake for 12 to minutes or until the muffins test done.  Let cool for a few minutes in the pan and then remove the muffins from the pan and serve warm.

Ingredients: White rice flour, potato starch, corn starch, tapioca flour, xanthan gum, brown rice flour, and sorghum flour.
