We laced this heritage bread with finely cracked wheat to create a hearty, wholesome bread. Now, we realize that not everyone likes the kernels of cracked wheat in their bread--but we do and we think you will. Folks keep buying this again and again. You'll find that the long cycle on your bread machine softens the cracked wheat. The bread is still chewy but coupled with the right mixture of whole wheat and bread flours, this is an intriguing, premium bread.
We used finely milled flour made from choice Montana wheat. This is great flour--and the flour makes the bread. You'll like the sweet, nutty taste without the bitter aftertaste of some whole wheat breads.

If you make this bread in your bread machine, water temperature is critical. Please use a thermometer to measure water at exactly 80 degrees. A ten degree difference in water temperature can double the growth rate of the yeast. These bread mixes are satisfaction guaranteed when you use a thermometer.

Ingredients: Enriched wheat flour (wheat flour, malted barley flour, niacin, iron, thiamin mononitrate, riboflavin, and folic acid), whole wheat flour, cracked wheat, sugar, milk (nonfat dry milk), salt, yeast (yeast, monostearate), and dough conditioner added for better baking (wheat flour, dextrose, soy flour, calcium salts, dicetyl tartaric acid esters of mono- and diglycerides, ethoxylated mono- and diglycerides, soy lecithin, ascorbic acid, L-cysteine monohydrochloride, fungal enzymes, azodicarbonamide, and calcium iodate). This mix contains wheat, soy, and dairy products and may contain traces of eggs, peanuts, or tree nuts.
