One of the most frustrating things about making a pizza is rolling out the dough only for it to just keep shrinking and bouncing right back. You can thank the gluten in the dough for that. We like to give our pizza, pasta, and tortilla dough a superpower to combat that mortal enemy: dough relaxer!

  • Make your dough so much easier to work with! The dough relaxer relaxes the gluten to reduce spring-back and elasticity.
  • 1/3 cup brown or granulated sugar or to taste
  • No more frustration! The dough will keep its shape and lie flat as you roll it out and work with it instead of constantly bouncing back.
  • Same great taste! This secret superpower for your dough doesn't do much to affect the taste because all you need is just 3/4 teaspoon per cup of flour in your recipe.

It's the gluten that creates spring-back. A dough relaxer weakens the gluten to reduce the elasticity. You still have a chewy bread with a great crumb but the dough is much easier to work with. Just add 3/4 teaspoon for every cup of flour in your recipe.

Package net weight is 10 ounces or approximately two cups or 96 teaspoons--enough to use with about 128 cups of flour. You should make over 40 large pizzas or pasta batches with this package.

Ingredients: Enriched wheat flour (wheat flour, malted barley flour, niacin, iron, thiamin mononitrate, riboflavin, and folic acid), salt, and soy oil. Contains 2% or less of l. cysterine, asorbic acid, and enzyme. This product contains wheat and soy and may contain traces of eggs, milk, tree nuts, or peanuts.

Greatly Improved The Crust

We were really pleased at the texture of the dough once baked. It also rose much better, sort of fluffy! We had a couple of large pieces of pizza left, refrigerated it overnight and warmed it the next day, and the crust was even better. I highly recommend! Generally, my crust is dry, despite the recipe I was using.

Review

I used this relaxer this morning for homemade noodles and it works wonderful! It takes less time to roll out and the noodles were very good. It also helped that I purchased from this site a really good rolling pin...the stainless steel one. I hated spending $$ for it, but I'm glad I did. Wish I woulda had it the last 40 years. Buy the relaxer and get a good rolling pin!!
