Grilled cheese is America’s favorite grilled sandwich.  Slipping a little ham in with the cheese is common—but how about bacon?  We prefer bacon over ham in our grilled sandwich.  This one is made on sourdough bread and makes a wonderful, hearty sandwich for those cooler days ahead. We eat a lot of grilled salmon in the summer. Maybe it’s all those years in Alaska. We top that salmon with sauces or salsas. So here is another—corn salsa made with corn, tomatoes, cilantro, and avocado. Not only does it work well for salmon, it’s great for chicken or pork. Salmon with Irish Lemon Butter

Grilled salmon is easy and quick. You can do it indoors in the oven, on your countertop grill, or out on the patio. It’s good and good for you. All you need for seasoning is salt and pepper. Honey Ham Monte Cristo Sandwiches

This is a traditional Monte Cristo recipe but instead of raspberry jam we made a honey mustard spread.  To give the honey mustard spread a bit of kick, we added some finely diced chipotle peppers.  We could have gotten the same effect with a few drops of hot sauce.  You can season the spread to your taste. Italian Prosciutto Panini Sandwich Recipe

This made a great sandwich on New York Rye Bread.  Yes, we know—New York Rye is not Italian but it works wonderfully well.  In our test kitchen, once the photos were taken these sandwiches disappeared in an instant.  Tomato, mozzarella, and Prosciutto always makes a great combination.
