Pork Chops with Apple Gravy

Pork and apples is a classic combination, but the apple gravy is a different twist. We like this pork chops and apple gravy recipe with new red potatoes. The apple cider isn’t dominant, so the gravy works well with potatoes. You can make this on the stovetop or cook your pork chops on the grill.  If you cook the pork chops on the grill, you won’t have drippings for the apple gravy, so we have given you an alternative using Instant Clearjel and butter.  With Instant Clearjel, you don’t have to cook the gravy, so it’s very easy to make.  Of course, …

How to Make Monte Cristo Sandwiches

This is an old French sandwich circa 1910. It became popular in America in the 1930’s and then seem to drop out of sight in the 1960’s. My dad loved Monte Cristo sandwiches. As a child, it seemed that they were popular in diners and other casual recipes. Either way, they were made with meat, usually ham, and a soft cheese, raspberry jam, and mustard or a hot sauce. They are now a type of sandwich, a meat and cheese sandwich cooked like French toast or deep fried. We’ve maintained the sweet layer with either jam or a flavored honey.

A Lunch for a Mountain Hike

(Includes how to make a sandwich wrap) Last weekend Merri Ann and I went hiking with our 9-year old granddaughter, Anna. It was delightful. Anna and Merri Ann took pictures of flowers and landscapes. We explored seldom used trails and climbed a rocky outcropping to overlook the canyon. We think we’d like togo again this Saturday. Super! We’ll pack a lunch and throw in some marshmallows for roasting. We’ll keep the perishables cool in insulted lunch bags packed with ice packs. This is what I’m thinking for a menu: Crackers and cheese. I’ll choose a wax enclosed Gouda. The wax …

How to Make Focaccia Sandwiches

In my earlier years, we lived by a little sandwich shop that we absolutely loved. I was always so excited to try new things, so when I discovered the focaccia sandwich, it was love at first bite– the light and chewy, herb-infused focaccia with delightful sandwich fillings in every bite. These focaccia sandwiches are an answer to that childhood memory. About the Focaccia Focaccia is so easy to make, especially when you use a mix. You don’t even need to know how to bake bread to make the focaccia for these easy sandwiches. All you have to do is combine …

Hot Turkey Sandwiches with Sweet and Sour Onions

These sandwiches can be made grilled, open-faced, or panini style.  The caramelized onions accent the sandwich as relish might.   The secret ingredient in the sauce is apricot jam. We used sourdough bread and it was perfect but any quality, hearty bread will work.  These sandwiches would also be good with deli roast beef or ham. Ingredients 2 large onions cut into slices and then cut into 1/2-inch pieces 4 tablespoons butter 1/4 cup low-sodium soy sauce 1/3 cup apricot jam 2 tablespoon granulated sugar 2 tablespoons white wine vinegar 1/3 cup water 1/2 teaspoon garlic powder 1/2 teaspoon ground ginger …

Open Face Turkey and Cheese Sandwiches

If a cold turkey sandwich seems boring, try this. Sometimes turkey sandwiches seem dry.  This has two things going for it: a topping of cheese sauce and dip spread across the bread as you would mayonnaise.  We used Grilled French Onion Dip and really liked it.  For more flavor, try a bean dip, a cheese dip, or a ranch dip with more intensity. This sandwich is great on your favorite bread.  Our favorite was San Francisco Sourdough made in our bread machine. Ingredients For the cheese sauce: 3 tablespoons butter 3 tablespoons all-purpose flour 1/8 teaspoon salt 1/8 teaspoon white …

Oriental Chicken Pasta Salad

This is our favorite pasta salad. With chicken and vermicelli, it is substantial enough for a main dish and has a very nice mixture of subtle flavors with a little kick from the ginger. We’re not sure of the origin of this recipe. It’s definitely oriental and reminds us of Thai cooking—though it really should be made with authentic Thai noodles. We think you will enjoy this recipe. Ingredients 8 to 10 ounces of uncooked vermicelli 1/3 cup mayonnaise 1/3 cup plain yogurt 1 tablespoon sugar 1 tablespoon soy sauce 1/2 teaspoon freshly ground ginger 2 chicken breasts, grilled or …

Roasted Tomato Soup with Bacon

It started as an experiment.  Cream of tomato soup with a grilled cheese sandwich has always been a favorite.  But we read that roasting the tomatoes brings out more flavor.  We had to try. We started with our favorite cream of tomato soup recipe, a soup sprinkled with bacon bits, and made it with roasted tomatoes.  Our favorite soup just got better.  It is better when the tomatoes are roasted. To roast the tomatoes, we used our rack and baking sheet.  For us, this is a multi-purpose roasting tool.  We lined the baking sheet for easy clean up, set the …

How to Make Monte Cristo Sandwiches with Lingonberry Jam

Dennis Weaver I love Monte Cristo sandwiches.  They are my favorite grilled sandwiches.   But it’s not just the type; I love the combination of ham, cheese, and raspberry jam.  (Traditionally, mustard is added but I usually leave that out.)    But I like lingonberry jam even better.  Usually, I’m pairing lingonberry with turkey but it’s also superb with ham. You can use whatever filling you want.  We’ve even made them with peanut butter and jelly.  But today, we’re using lingonberry jam. Lingonberries are beautiful bright red berries, a cousin to a cranberry, with a unique, intense flavor.  In Scandinavia, they are …

Tips for Making Great Grilled Sandwiches

Melissa, our baker, makes great grilled sandwiches. So we sat down with her to find how she did it. Melissa: Well, it’s hard to go wrong with a grilled sandwich—just use good ingredients and serve them while they are hot. PP: Come on, Melissa. There’s more to it than that. Melissa: Not much. I like to get all my ingredients staged on the counter before I begin cooking. Then I’m not rummaging through the refrigerator looking for …
