How to Make Delightful Whipped Cream or Frosting with Cocoa

Whipping cream makes frostings lighter and less dense than butter. You and your family will love them. The difference between whipped cream and whipped cream frosting is not much. Usually you want the frosting to hold up longer and so will need more stabilizer. We always add meringue powder to our whipped cream to retard melting. We add more for frosting. We use meringue powder so often that we consider it a kitchen essential. This is our standard recipe. It’s so simple, we have it memorized. Ingredients 2 cups heavy whipping cream 1/3 cup granulated sugar 1/4 cup rich dark …

How to Use a Mix to Make Carrot Cake that Will Rock Their Socks!

Use a mix to make carrot cake or carrot cake cupcakes five ways. Start out with a cream cake mix.  Add grated carrots, cinnamon, and nuts and you have a traditional carrot cake.  Add cinnamon chips, coconut, candied ginger, or pineapple to make scrumptious variations.  Bake then as cupcakes or a sheet cake. But the real killer is the frosting.  Everyone likes cream cheese frosting but it’s dense and rich. Use the following whipped cream frosting and it’s light and dreamy. Chubby Cherry Whipped Cream Cake

Our Chubby Cherry Filling and Topping is really good so we had to make a cake out of it.  We added Chubby Cherry to the frosting, put it between the layers, and spread some on top.  Very good. 1 Vanilla Bean Cake Mix 3 large eggs 1/2 cup water Chubby Cherry Filling and Topping 1 whipped cream frosting recipe and decoratings (We used some caramel sauce in the cake above; put the frosting swirls over the top of the caramel.) Preheat the oven to 325 degrees. Mix the cake batter in your stand type mixer, per package instructions. Spread batter in …

Caramel Nut Whipped Cream Cake

We’re famous for our caramel nut whipped cream.  For two cups of whipping cream, we add two teaspoons of caramel flavor, brown sugar instead of white, and two tablespoons of meringue powder.  At the end, we fold in chopped nuts.  But they are not ordinary chopped nuts; they’re mixed, salted snacking nuts. The contrast of the salt and sweet and the smooth and crunch is delightful.  When we serve that in the store, customers insist on the recipe. To make these cakes, we didn’t make many changes. We stayed with the white sugar so that we would have a snow …

Huckleberry Whipped Cream Cake

Huckleberries are a big deal in Idaho and Montana.  There are folks that spend their weekends in late summer searching for and picking huckleberries. Huckleberry jam and even frozen huckleberries are sold in gift shops and even convenience stores.  They are slow to pick and expensive to buy. A nice couple came into our store wanting a huckleberry cake. Of course, we didn’t have the makings for a huckleberry cake.  We got thinking about it: “Why not?” The next morning, we made a huckleberry cake. We didn’t have any huckleberries but we had huckleberry flavor and huckleberry jam.  That was …

Apricot Cream Cake with a Mango Drizzle

This is one of my favorites, a very fragrant, fruity cake. We made this cake because we are in love with our apricot flavor.  It’s delightful, smooth, sweet, and authentic. As expected, it made a great frosting. That’s a Mango Designer Dessert Sauce drizzled over the top.  It’s the perfect complement. 1 Vanilla Bean Cake Mix 3 large eggs 1/2 cup water 1 teaspoon Marsden and Bathe Apricot Flavor or equal Mango Designer Dessert Sauce for drizzling 1 whipped cream frosting recipe and decorations Preheat the oven to 325 degrees. Mix the cake batter in your stand type mixer, per package instructions. …

Lemon Cream Cake with Lemon Filling

This is a delightful cake, one of the favorites in the store. We topped this cake in several ways.  What you see on this is a light coating of lemon designer dessert sauce sprinkled with lemon bark.  The sauce holds the bark in place. The bark is crushed candy pieces, lemon and white chocolate. Both the sauce and the bark contribute an intense lemon flavor. The filling is lemon pastry filling, very much like lemon curd.  No wonder our customers loved this cake. 1 Vanilla Bean Cake Mix 3 large eggs 1/2 cup water 1 teaspoon lemon flavor 1/2 cup lemon …

Pumpkin Cake with Whipped Cream Frosting

We originally designed this recipe for a pumpkin sheet cake with a very good cream cheese frosting recipe.  But we used this to make our whipped cream layer cake and it was perfect.  You’ll find both frosting recipes here. We used a Vanilla Bean Baby Cakes Mix. It makes a cream cake, denser than store mixes but lighter than a pound cake.  It is the perfect density for a pumpkin cake. You add spices, nuts, and canned pumpkin. You may substitute one tablespoon pumpkin pie spice for the cinnamon, ginger, and nutmeg listed in these instructions. 1 Vanilla Bean Cake Mix …
