This is a universal favorite—everyone likes this simple, peppery Parmesan dip. Once the cheese is grated, it only takes a moment to make.
For a smooth, silky dip, use a fine grater. For the best flavor, use freshly grated Parmesan, not the bottles that you buy in the dairy case.
1/2 cup sour cream
2 tablespoons mayonnaise
1 tablespoon fresh lemon juice
1 cup finely grated Parmesan cheese
1/4 teaspoon salt
approximately one-fourth teaspoon freshly ground peppercorns, preferably Tellicherry
Mix everything together reserving part of the ground peppercorns. Sprinkle the remaining peppercorn flakes over the top of the dip. Serve chilled.
Baker’s note: The multicolored peppercorn flakes sprinkled over the light-colored dip are quite attractive.
