Choose a Sturdy Bread
Super airy bread tends to fall apart. Choose a bread with structure. Day-old bread works great!
Beat the Eggs
Use a whisk to beat the eggs. The egg yolks and egg whites should be well mixed.
Use Butter, Not Oil
Butter lends more flavor than oil to your French toast, though it does burn more easily. Use a lower temperature and watch your butter carefully. Wipe any browned butter from the pan between batches.
Soaked, Not Soggy
The egg mixture should soak through the bread for the best texture, but don’t leave it in for so long that the bread turns soggy and falls apart when moved.
Crispy Yet Creamy
Use medium-high heat, so your French toast is cooked to a crispy, golden-brown on the outside with a creamy, custard-like center.
