It’s quick and easy to make tuna melt sandwiches.  Use firm bread, not the inexpensive soft loaves in the store, to hold together with the most tuna filling and then cook them until golden brown and crisp. For this recipe we used Black Russian Pumpernickel Bread. This corn bread has some kick to it especially if you use other than mild chilies.  The chilies, sundried tomatoes, and cheddar create a lot of flavor in this unusual cornbread. Kansas Corn and Oat Bread

This is an unusual but very good bread made with both oat flour and ground corn.  It is similar to Anadama Bread and is especially good for toast.  It is made with a combination of four flours: Cornmeal, oat flour, whole wheat flour, and white bread four.  Since only the wheat flours form gluten, the majority of flour must be wheat but there is enough oat and corn to make the bread rustic reminiscent of a peasant bread.
