Buttermilk Syrup Recipe with Flavor Variations


For years, people asked us about buttermilk syrup.  We finally got around to making it.  They were right, it was scrumptious.  We served it with lemon pancakes to visitors to our test kitchen and every one of them asked for the recipe.  This is good recipe to add to your arsenal.

We’ve made this with different flavors, each giving a slightly different nuance.  While they were all good, the favorites were the batches with French vanilla and with caramel flavor.

1 1/2 cups granulated sugar
3/4 cup buttermilk
1/2 cup butter
3 tablespoons corn syrup
1 teaspoon baking soda
2 teaspoons extract or another flavor

In a large saucepan, place the sugar, buttermilk, butter, corn syrup, and baking soda.  Cook over medium heat until it starts to boil, stirring often.  Once it comes to a boil, set the timer for six minutes and continue cooking, stirring often so that it does not scorch.

Remove from the heat and add vanilla extract or another flavor.  We have made this with French Vanilla, Madagascar vanilla, caramel flavor, and brown sugar flavor and they are all excellent.
