This is a classic combination, hot biscuits and a rich, meaty gravy made with a white sauce, a milk gravy. You can use that family favorite recipe for biscuits or chose one of ours.
8 to 10 biscuits
1/2 pound ground beef, ground pork, or breakfast sausage
2 tablespoons butter
1/4 cup all purpose flour
3 cups milk
Salt and pepper
- Sauté the ground meat until it is cooked. Drain it and set it aside on a platter reserving two tablespoons of the grease.
- Add the butter and two tablespoons of grease back to the pan and set the heat to medium. When the butter is melted, add the flour a little at a time while whisking until a paste is formed.
- Add the milk a little at a time, continuing to whisk to achieve a smooth gravy. Add the meat. Cook until it becomes bubbly and thick. Season with salt and pepper. You should now have a thick, smooth gravy.
Split the biscuits in half and spoon the gravy over them. Serve immediately.
