Biscuits and Gravy

Biscuits and GravyThis is a classic combination, hot biscuits and a rich, meaty gravy made with a white sauce, a milk gravy.  You can use that family favorite recipe for biscuits or chose one of ours.


8 to 10 biscuits

1/2 pound ground beef, ground pork, or breakfast sausage
2 tablespoons butter
1/4 cup all purpose flour
3 cups milk
Salt and pepper


  1. Sauté the ground meat until it is cooked.  Drain it and set it aside on a platter reserving two tablespoons of the grease.
  2. Add the butter and two tablespoons of grease back to the pan and set the heat to medium. When the butter is melted, add the flour a little at a time while whisking until a paste is formed.
  3. Add the milk a little at a time, continuing to whisk to achieve a smooth gravy.   Add the meat.  Cook until it becomes bubbly and thick.  Season with salt and pepper.  You should now have a thick, smooth gravy.

Split the biscuits in half and spoon the gravy over them.  Serve immediately.
