You can have a ton of fun with ice cream sandwiches. It’s simple to make them like those above, simply two cookies with ice cream smashed in the middle. We’ll even share a few of the tricks we’ve found to make them even better than those you can get from the grocery store.

  1. Bake the cookies according to the package instructions.
  2. Layer on a scoop of ice cream and smash it between two cookies.
  3. Roll the edges of your ice cream sandwich in jimmies. Enjoy!

Tricks to Make Perfect Ice Cream Sandwiches Every Time

The Perfect Cookie

Soft Cookies - To make ice cream sandwiches better than the store, the key is to use a soft cookie. That way, the ice cream doesn’t ooze out and make a mess when you take a bite.

Right Size and Uniformity - It may be a personal opinion, but when an ice cream sandwich looks good, it tastes good too. To make uniform cookies, you can do these three things:

  • Use a scoop. With a scoop, you get the same amount of dough each time so all our cookies will be the same size.
  • Use an oven thermometer. When the temperature is the same, the spread is the same.
  • Use parchment paper. With the same surface and the same temperature, your cookies will spread the same each time.

The Best Ice Cream

Use an Ice Cream Scoop - Once again, uniformity matters here. By using an ice cream scoop, you’ll be getting the same amount of ice cream on each ice cream sandwich, and it will be easier to decorate.

Avoid the Ice Cream Mess - You’ll need the ice cream to be soft enough that you can squish the ice cream sandwich together. Then you can freeze your ice cream sandwiches for an hour, so the ice cream won’t melt all over the place.

The Squeegee Technique

Get Creative - Maybe the “squeegee technique” isn’t a real thing, but it will make decorating your ice cream sandwiches easier. Use a knife or a small rubber spatula to scrape the edges of the ice cream that are overflowing from the cookie.

This way, you have a flat edge to roll into the jimmies.
