Use this mix to make Old-Fashioned Raised Glazed Donuts or Baked Donuts.
You can make either with this mix. The mixing instructions are the same. You can either deep fry or bake your donuts. Mixing instructions come for both.
Cut the dough into 12 to 14 equal pieces, form them as you would dinner rolls, place them on a prepared baking sheet with room to expand and let rise until puffy. Baked Donuts are baked in an oven at 375 degrees for 12 to 14 minutes.
Whether baked or fried, you can frost or fill them. The following are suggestions to get you started.
Vanilla Cream Baked Donuts
The donuts are glazed and then sliced with a serrated knife and filled with vanilla whipped cream. If you are not going to serve them right away, add meringue powder. Meringue powder will make the whipped cream firmer and slow melting. Add one tablespoon of meringue powder for every one cup of whipping cream.
Strawberry Shortcake Baked Donuts
Make as above. Add thinly sliced fresh strawberries to the filling.
Chocolate Vanilla Bismarck
Make as Vanilla Cream Donuts but top with a layer of fudge frosting or ganache.
Lemon Filled Baked Donuts
Instead of slicing the donuts, fill them with lemon pastry filling as you would fill cupcakes. Slice a small hole in the sides of the donuts, insert the tip of bag and squeeze. Glaze the donuts.
Traditional Chocolate and Bavarian Cream Bismarck’s
Instead of filling the donuts with lemon filling, use Bavarian Cream and top them with fudge frosting.
Tips for Success
• Donuts are best served fresh, the same day.
• The dough is fairly slow rising. Put it in a warm space to hurry it along such as a warm window sill or other warm spot.
• Let the dough rise until puffy. If the donuts start to blister, poke the blisters with a knife point and hurry them to the oven.
