It was a really good cheese, a smoked Swiss cheese, that paired perfectly with the concord-colored grapes. It was so good that it got us thinking about all the ways that we use cheese in our baking and cooking--which led to this issue.
We thought we would share seven favorite ways to cook with cheese. Here you will find a great macaroni and cheese (not just for kids), cheese biscuits, cheese pizza, cheese enchiladas, a cheese dip, a favorite grilled cheese sandwich, and a cheeseburger.
We will also find tips to help you choose and enjoy great cheese.

A Walk in the Woods and a Great Cheese
It’s September and our favorite time for hiking in the woods. In the high country, the leaves are just starting to turn--splashes of deep orange nestled among the pines and other greenery. In a couple weeks, the aspen will turn a golden yellow. The temperatures are down making hiking more comfortable and the bugs are gone. The morning air is crisp and in the high country, there is a dusting of frost. It’s a perfect time for a walk in the woods.
If we’re going to be gone long, we carry a snack in a day pack. Most often that is a wedge of cheese and fruit or maybe some hard crackers. We’ll carry a pocket knife to cut the apples and grapes will go in a plastic container with a snap-on lid. We’ll freeze a water bottle or maybe a gel pack. We’ll wrap a jacket around the frozen bottle and tuck the cheese and fruit next to it. Along the trail, we’ll stop—maybe over a yellowing meadow where we can watch for deer along the edges—and enjoy cold fruit and a great cheese. On the way back, we’ll drink the icy water from the once-frozen bottle.

Favorite Cheeses for Snacking and Parties
It’s harvest time. With the best apples of the season, grapes, and pears, we eat more cheese. A great cheese and a crisp, fresh apple may be our favorite snack. Usually we prefer mild, soft cheeses for snacking and robust, sharp cheese for cooking but there exceptions. We would like to recommend some of our favorite cheeses for snacking.

# 1 Peppercorn Cheese Dip

We went in search of a “favorite” cheese dip. With so many to choose from, we considered a bacon and cheese dip, a spinach and cheese dip, spicy Southwest dip. We settled on a simple parmesan dip because it showcased one of our favorite cheeses without a lot of competing flavors. It’s also a very attractive dip for your next party. We think you will like this dip.

#2 Favorite Cheese Biscuits
Years ago I walked into a seafood restaurant, one of the national chains. They served a cheesy baking powder biscuit. Ever since, I’ve tried to best their biscuits. This comes close.

# 3 Creamy Macaroni and Cheese

Our kids love macaroni and cheese. What we wanted was a grown-up macaroni and cheese and one that kids would still eat.
For cheese, we chose Romano, mixed it with sour cream and buttermilk to make it super creamy, and then topped it with a little cheddar. We think you’ll like this.
