When you walk in the bakery, you see these attractive, high-domed muffins. A bullet-shaped top seems to be the goal of muffin making. Well, you can do that at home—make muffins that look like they came from the bakery.


How to Mix Muffins

If you want to be the consummate muffin maker, you need to understand the two mixing methods for muffins: the creaming or cake method and the muffin method. The creaming method will make a more cake-like muffin and the muffin method a more bread-like muffin.

You can switch back and forth between these methods. When a recipe calls for the creaming method, by melting the butter and mixing it with the liquids, you can use the muffin method. By switching from oil to butter, you can use the creaming method.

How to Remove Your Muffins from the Tins

You may have a struggle trying to get your muffins from the tins without tearing them apart. Here’s help:

1. Use a good quality tin, preferably one with a nonstick finish. Old, worn, tins don’t release as easily.
