For the Pleasure of a Coffeecake

Coffeecakes are scrumptious—delicate, warm, and moist. We like them with fruit and nuts. We like them laced with fruit. We like them with crumb toppings.

In this issue you will find a recipe for a coffeecake that is loaded with a fruit filling. Simply add a can of your favorite pie filling. We liked it so much that we tried it again with a layer of cream cheese. That was very good also, so we included a recipe for a coffeecake with fruit and a cream cheese filling.

Here are some tips for coffeecakes:

• Don’t over mix your batter. Mixing develops the gluten and creates a tougher texture instead of the tender texture that we all love.
• Consider using a springform pan. Snap the ring off and it’s easy to remove nice, neat slices. Your coffeecake presents nicely on a springform base.
• Coffeecakes are best warm. Time your baking to serve your coffeecake 20 minutes after it comes from the oven.
• Store leftover coffeecake at room temperature. Refrigeration actually speeds staling of the cake.
• Reheat leftovers in a warm (300 degrees) oven for fifteen minutes. Wrap the cake in aluminum foil before heating.
• Individual slices can be frozen for up to three months. Wrap the slices in aluminum foil and place the slices in a heavy plastic bag.



Coffeecake with Fruit Fillling

This coffeecake will get them smiling. Everyone loves a warm, tender coffeecake. This one is filled with fruit and made easy because you can use a canned fruit filling. In fact, choose your favorite pie filling—cherry, apple, apricot, peach or more. With the filling tucked inside the coffeecake, this reminded us of a streuselkuchen. It is very good.

 


Cream Cheese and Fruit Coffeecake

If fruit in a coffeecake is good then fruit and cream cheese should be even better, right? We decided to find out. We took our coffeecake recipe with fruit pie filling and added a layer of cream cheese filling. The results were scrumptious. A little on the rich side, maybe even more of a dessert than a coffeecake—but you decide.

 


Types of Cornbread

You can tell that we love cornbread. You can do so much with cornbread. Think of it as an empty easel, adding the flavors and colors that fit your fancy.

It helps to understand the types of cornbread. It’s easier to anticipate the finished cornbread or modify a recipe to match family’s tastes.

Sweetened cornbread: This is Yankee cornbread, slightly sweet to the taste. Look for one two tablespoons of sugar in the recipe.
Southern cornbread: This is the classic, traditional cornbread with just a teaspoon or two of sugar (and in some cases, none). Drizzle honey or syrup over this cornbread or serve it with jam.
Flourless cornbread: Flourless cornbread relies on the proteins in eggs to provide structure instead of the starches in flours. Most cornbread recipes have about the same amount of flour as cornmeal.
Sweet or savory cornbread: You can mix sweet or savory additions into your cornbread. In this issue, you will find bacon, cheddar, peppers, and onions as savory additions. Blueberries, apples, nuts, and dried fruit all work well in cornbread.
Yeasted cornbread: Yeasted cornbread is chewy and wonderful. The gluten in the bread flour is developed so that it has a texture more like bread than cornmeal. Anadama Bread has a small portion of cornmeal added.

Cheddar and Bacon Cornbread

Corn bread is quick, easy, and nearly foolproof. It is also versatile—bake it for breakfast, a brunch, and side dish with supper.

This cornbread is made with bacon, cheddar, onion bits, and some red pepper or pimento for color. It is an egg-rich, skillet cornbread and a flourless recipe.

 


Apple and Bacon Cornbread

At first glance, this is similar to our Cheddar and Bacon Cornbread but it is really quite different, a sweeter cornbread with a different texture. Apple and bacon are a wonderful combination. Instead of cheese, it made with melted butter and with maple syrup, it is a little sweeter. Again, it is an egg-rich, skillet cornbread and a flourless recipe.

 


How to Make Cornbread Croutons

As one of our good readers reminded us, cornbread makes wonderful croutons. (The Cheddar and Bacon Cornbread is worth making just for croutons.) We’ll let Michelle tell you how in her own words:

“I deliberately make extra cornbread so that I can make cornbread croutons the next day. I simply crumble up the leftover cornbread on a baking sheet and bake it at 250 degrees until golden brown. Sometimes I toss a little sharp cheddar shreds on top - sometimes not. It's absolutely FABULOUS on salads. Try it!”

Thank you, Michelle. We enjoyed cornbread croutons on our salads last night and they were fabulous.

To get your croutons sufficiently dry and golden takes about 15 minutes in the oven.
