| Steamed Bread: At Home, at Camp, or in an Emergency |

Steamed breads are so versatile. We love the outdoors and are always looking for interesting and different foods that we can cook while camping and steamed breads can be cooked as you lounge around the campfire. They make wonderful treats at home. And they make great emergency fare since you don't need an oven or even a range to cook these breads.
We put the following recipe together for a trip into the Wind River Mountains of Wyoming with a group of varsity scouts. We started it cooking next to the morning fire and by the time breakfast was over and the dishes were done, the bread was ready. It was a little rich for morning food-more like a cake than a bread--but these backpackers didn't seem to mind and it certainly turned out good enough to be a treat at home.

| How to Measure |

There's a right way and a wrong way to measure and by measuring right, you will get the consistent results you are looking for.
To measure liquids: Use a clear glass measuring cup, one designed for liquids. Fill it to the mark and set it on the counter or on a shelf at eye level and look through the glass. Never try to hold the glass up to your eyes-it will never be as level and steady as on the counter.

Cookies in Uniform
To make formed cookies from uniformly-sized balls of dough, roll the dough into a log the diameter that you wish the balls to be then slice the log into equal chunks. Form the chunks into balls.
Hard Boiled Eggs
To make your hard-boiled eggs easier to peel, place them in cold water after boiling and let them sit for at least two minutes. To peel, tap the egg on the counter to crack the shell and then roll it between your palms. Begin peeling from the large end.
A greenish ring around the yolk of a hard-boiled egg is common. It is caused by the formation of iron-sulfide from the yolk and is harmless. The more the egg is cooked, the more pronounced the green is likely to be.
