For a change of pace, use your leftover turkey to make this quick and easy salad.
Ingredients
2 cups cooked turkey meat, chopped1/2 teaspoon garlic powder1 cup salsa or taco sauce1/2 teaspoon of chili powder or to taste1 can red kidney beans, drainedTortilla or corn chipsChopped iceberg lettuceChopped tomatoesSliced ripe olivesSliced green onionsSalsaSour cream (optional)Guacamole (optional)
Directions
1. In a skillet, heat the turkey meat with the garlic powder, taco sauce or salsa, chili powder, and beans. 2. Line the serving bowls with chips and then the chopped lettuce. Spoon the meat mixture onto the lettuce. Sprinkle with the chopped tomatoes, green onions, and sliced olives. Top with the shredded cheese.
Serve with a dollop of sour cream, salsa, and guacamole if desired.
