These are the knives that we use in our test kitchen and we love them. We use this knife all the time—in place of a chef’s knife and for chopping nuts and veggies. It works as a bench scraper and to cut pizza and chees ecake. The design allows it to cut cleanly without sticking. You can even turn it flat and use it as serving spatula.

Great Knife!

This is absolutely the sharpest knife I have ever owned. This is my first santoku. The only thing I have noticed is that the food still sticks to the sides, but that is a minor inconvenience, because the sharpness makes up for it!
