The California settlers relied on natural yeast spores to raise their breads and a good sourdough starter was prized and guarded.  In the wet, cooler climate of San Francisco Bay, yeast spores and therefore starters, were different and San Francisco breads were distinctive with a unique sourdough flavor that is famous around the world.

With this bread mix, you will make a San Francisco sourdough in your own kitchen, one that has the tangy, distinctive flavor of San Francisco Bay.   It will be chewier and crustier than other breads made in your bread machine and will look like the authentic sourdough bread with its split white top.

Notes to Bakers:

For a crusty bread:  This sourdough bread naturally forms a more chewy crust than other mixes and a "medium" crust setting will be adequate in most bread machines.  To maintain a chewy crust, store your bread in a paper bag, not plastic.  (In plastic, the bread sweats and softens the outer crust.)

If you bake it in your oven:  In your bread machine, this mix forms a very moist dough ball--too sticky to handle.  You'll want to reduce the water by a couple tablespoons.  You can make a wonderful sourdough bread in your oven but it takes a little patience.   With less water, this is a slow riser.  Allow at least a couple hours for it to rise on your counter.

If you make this bread in your bread machine, water temperature is critical.  Please use a thermometer to measure water at exactly 80 degrees.  A ten degree difference in water temperature can double the growth rate of the yeast.  These bread mixes are satisfaction guaranteed when you use a thermometer.

Ingredients: Enriched wheat flour (wheat flour, malted barley flour, niacin, iron, thiamin mononitrate, riboflavin, and folic acid), sourdough base (wheat flour, salt, fumaric acid.  Contains 2% or less of diacetyl tartaric acid esters of monodiglycerides (datam), soy oil, lactic acid, acetic acid, enyzeme, L. cysteine, ascorbic acid, azodicarbonamide (ADA)), sugar, and milk (dry milk solids). This product contains wheat, soy, and dairy products and may contain traces of eggs, peanuts, or tree nuts.

Pretty sticky dough

I've made this sourdough about four times I think. It is quite tasty but I found the dough to be very, very sticky. It stuck to the sides of my (nonstick) bread machine pan each time and getting the paddle out before baking left my hands so sticky. The dough was certainly not like "regular" dough holding together in a lump while I pulled out the paddle. The last time I decided to put in less water and it seemed to be doing fine but then stuck to my non-stick pan again so I again (like all the previous times) had to end up putting in more flour. It's tasty but sticky.------- Hi Jan. This mix works perfectly in bread machines. In a bread machine, you get a marvelous chewy, split crust. If you are mixing it in your bread machine and then taking it out to bake in the oven, it is sticky. Unlike our other mixes, if you take it out of the machine, you need to add a little flour. Sourdough saves the day!

Things have been exceptionally hectic this holiday season. When Christmas morning arrived and I began preparing our meal, I realized that there was no time to make rolls. Right before I started to panic, I saw the sourdough bread mix packet in the pantry. The directions were short and simple so I pulled out my bread machine and 5 minutes later, the machine was doing its thing and I forgot about it until the bread was ready. The aroma was so tempting, I had to immediately slice off a piece. To say I was thrilled would be an understatement! This is the best sourdough east of California. Thanks!!!
