Cream Cheese and Chocolate Muffin Tops
These are strange little muffin tops—but mighty tasty. They are made with chocolate batter that is dabbed with a cream cheese and chocolate chip mixture.
It is a recipe supplied by the pan manufacturer and is quite different from most muffins.
Ingredients
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/4 cup good quality cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup vegetable oil
1 teaspoon vinegar
1 tablespoon vanilla
Directions
Preheat the oven to 375.
1. Combine the flour, sugar, cocoa, baking soda, and salt in a large bowl.
2. Mix the water, oil, vinegar, and vanilla together in a small bowl. Make a well in the dry material and add the water. Stir until just combined.
3. Grease and flour the muffin top pan. Place about 1/4 cup of batter in each cup. Dab on four separate rounded teaspoons of prepared filling (see below) close to the edge of each muffin.
4. Bake for 15 minutes or until done. Let the muffin tops sit in the pan for about 2 minutes before removing. Makes 10 muffin tops.
For the filling:
1 8-ounce package of cream cheese
1 large egg
1/2 cup granulated sugar
1 6-ounce package of pure dark (semisweet) chocolate chips
Beat together the cream cheese, egg, and sugar until smooth. Stir in the chocolate chips. Use as stated above.
