Meringue Powder for Icing (8-ounce package--about 2 cups)

Does your icing tend to be sticky and your cookies don't stack or travel well without marring and sticking together?  There is a solution.

Meringue powder is essential if you make sugar cookies or decorate cookies or cakes.  You need to be able to make hard shell frostings like royal icing.  Traditionally hard shell icings relied on egg whites to create a shiny luster and a hard surface on the icing.  But today, most of us are concerned about using raw egg whites in our kitchen with the bacteria they may harbor. 

Enter meringue powder.  Meringue powder is made with dry egg whites with flavors and stabilizers added instead of fresh egg whites so the concerns about safety are eliminated.  And it's easy to use.  Simply add the meringue powder along with the powdered sugar to your recipe to create a frosting that will set up with a firm shell.  The more you add, the harder the shell.  For a moderately firm frosting shell, add two tablespoons per cup of powdered sugar. 

This meringue powder is packaged in a Vista® resealable bag for a long storage life.  It does not need to be refrigerated but should be resealed after each use and stored in a cool place. 

This meringue powder was specially formulated for use with recipes for icings, frostings, and buttercreams.  It is not intended for the types of meringues found on pies or those used for angel food cakes.
