Victorio strainers have been around for a million years. The Norpro Sauce Master model is a knock-off but weve used it extensively and as near as we can tell, its identical. Food mills use the rotating bevel principle to press food through a sieve while a potato ricer presses food through a sieve with a lever. Food mills are very quick but the bevel plate must cut through the food or ride over it so the food must be soft or cut into smaller pieces. The deluxe food mill has interchangeable sieve plates with different size holes so you can choose how fine you want your finished product. Tomato presses and Victorio strainers use a rotating screen.

Potato ricers have two main uses: To make light and fluffy mashed potatoes and to puree fruit and vegetables for canning purposes. Ricers use leverage to force potatoes or fruit through the sieve holes in the hopper. They are designed so that the skins and larger seeds are caught in the hopper. That means that you don't need to peel the potatoes--boil them with the skins on. And your mashed potatoes are lighter and fluffier if you use a ricer.
