How to Make Incredibly Good Scones in Four Easy Steps

The secret to great, flaky scones is to keep the dough cool enough that the butter does not melt but remains a solid.
1. Cut in the butter: Use a pastry knife or pastry blender to the cut the butter into the flour mixture. The remaining pieces should be no larger than a pea.
2. Combine: Add very cold water and the chips or fruit from the second packet. Stir and knead the mixture into a solid mass.
3. Form: Pat the dough into a round disk. Use a sharp knife to cut the dough into 12 wedges. Place the scones on a greased baking sheet.
