Chocolate Rice Pudding
There
is something luscious and irresistible about a good chocolate pudding.
This marriage of chocolate and rice puddings will be an absolute hit
with your family. It works for everyday and yet is elegant enough for
guests and an easy dessert that you make on the stovetop. Serve it warm
or chilled.

3 cups light cream
or 2 cups heavy cream and one cup milk
1/3 cup uncooked white rice
1/3 cup sugar
1/4 teaspoon salt
3 tablespoons quality
cocoa powder
3 tablespoons butter
In
a heavy saucepan, cook the cream, rice, sugar, and salt over medium
heat until it comes to a boil. Reduce the heat and continue cooking,
stirring often, until the rice is very tender, about 20 minutes. Remove
from the heat. Stir in the cocoa powder and the butter and stir until
well combined and the butter melted.
Spoon
into individual serving dishes. To store, cover with plastic wrap with
the plastic touching the pudding and refrigerate.
