Beer Batter Blooming Onion Mix Recipe

1 1/3 cups flour

1 teaspoon salt

1/4 teaspoon pepper

1 tablespoon vegetable oil

2 large eggs, separated

3/4 cup flat beer

Combine the flour, salt, pepper, oil, and egg yolks in a medium bowl. Gradually pour in the beer, stirring constantly. Cover and refrigerate for at least three hours.

Just before using, beat the egg whites until stiff and fold them into the mixture. Make your blooming onions according to the illustrated instructions.

This recipe makes enough batter for two medium blooming onions. This recipe can also be used for battering fish or vegetables.

Baker's note: This is a great little tool--we've used it--but it only holds onions to three inches in diameter.
