Now we have a neat little tool for making professional-looking ice cream sandwiches. It comes with a cookie cutter for making rectangular cookies. You place a cookie in the tool, then the ice cream, and then another cookie for the top. With a plunger action, it presses the cookies and ice cream together in a nice neat sandwich.

Baker's note: With this kit, you will cut the cookies for the top and bottom after baking, not before. To do so, pat or roll the dough on the baking sheet, bake, and then cut with the cutter. Place one cookie in the tool, then the ice cream, and then another cookie. Push the handle to press the cookies and the ice cream together and then remove the finished sandwich from the form.
The manufacturer's instructions include a recipe for Classic Chocolate Wafers. We preferred these cookies when they were baked for 15 minutes, not 20 minutes as called for.
