1 green pepper, seeded and sliced
1 medium tomato, sliced
2 hard cooked eggs, sliced
black olives, sliced
1/4 cup olive oil
1/4 cup balsamic or red wine vinegar
1 clove garlic, minced
1 tablespoon chopped fresh cilantro
1/2 teaspoon dried tarragon and 1/2 tablespoon fresh
1/4 teaspoon dried, crushed oregano or one teaspoon fresh chopped
1/2 teaspoon salt
1/4 teaspoon ground freshly ground pepper
- To make the dressing, mix together all ingredients and shake well.
- Assemble the salad by tossing the greens, green pepper, and cucumber slices together.
- Layer the tomato slices and egg slices over the greens. Sprinkle with olives.
- Serve with the dressing.
