Mexican Green Salad


Ingredients

salad greens
1 green pepper, seeded and sliced
cucumber slices
1 medium tomato, sliced
2 hard cooked eggs, sliced
black olives, sliced

Dressing

1/4 cup olive oil
1/4 cup balsamic or red wine vinegar
1 clove garlic, minced
1 tablespoon chopped fresh cilantro
1/2 teaspoon dried tarragon and 1/2 tablespoon fresh
1/4 teaspoon dried, crushed oregano or one teaspoon fresh chopped
1/2 teaspoon salt
1/4 teaspoon ground freshly ground pepper

Directions

  1. To make the dressing, mix together all ingredients and shake well.
  2. Assemble the salad by tossing the greens, green pepper, and cucumber slices together.
  3. Layer the tomato slices and egg slices over the greens.  Sprinkle with olives.
  4. Serve with the dressing.
