Apple Crisp with Guava Nectar and Almond Streusel

This recipe sounds more exotic than it is. You can purchase guava nectar concentrate in the frozen food section of the grocery. The apples are cooked in a guava sauce made with this concentrate. The guava juice reminds us slightly of strawberries. Slivered almonds add a wonderful crunch to the streusel topping.

Use this recipe to mix and match flavors. Use cranberry, raspberry, mango, strawberry, peach or any of your favorite juices in place of the guava nectar.

Filling:

3 medium baking apples peeled, cored, and cut into chunks (about 6 cups)
3/4 cup guava nectar concentrate mixed with 1/4 cup water
1 teaspoon vanilla
1 tablespoons cornstarch
1/2 teaspoon cinnamon
1/4 cup brown sugar, packed
2 tablespoons butter

1/2 cup flour
2/3 cup rolled oats
1/3 cup brown sugar
6 tablespoons butter
1/2 cup slivered almonds


375 for 30 minutes

Directions

1. Prepare the apples.
2. For the filling, mix the juice concentrate, the vanilla, the cornstarch, and the cinnamon in a large pan. After the filling liquid is mixed, measure and add the brown sugar. Stir until dissolved. Add the butter.
3. Add the apple chunks and stir to coat. Heat over medium heat until the apples are nearly tender and the sauce is translucent and bubbly.
4. While the apples are cooking preheat the oven to 375 degrees and mix the topping.
5. In a medium bowl, mix the flour, rolled oats, and brown sugar together.
6. With a pastry blender, cut in the cold butter. Stir in the almonds
7. Once the apple filling is cooked, remove the filling to an ungreased 8 x 8-inch baking pan.
8. Spoon the streusel topping over the filling. Bake the cobbler for 20 to 25 minutes or until the top begins to brown.

Serve hot with ice cream or whipped cream.
